– 2 Medium Sized Red Cod Fillets (Or any fish of your choosing)
– 1 dozen Prawns (tail off) or Shrimp
– 1 head of Broccoli
– 1 Red Capsicum
– 10-12 Snow Peas/Sugar Snap peas
– 225g Can of Sliced water chestnuts
– 225g Can of Bamboo shoot slices
– 1-2 Fresh Chillies or 1-2 teaspoons of crushed chillies from a jar
– 1 medium fresh lime
– 400g Can of Coconut cream
– 3 heaped teaspoons of Red Curry Paste
– Jasmine Rice

Firstly, start by dicing the fillets and browning with some olive oil and salt and pepper.

Next, add prawns, then crush chilli and add to frying pan.

Then add water chestnuts and bamboo shoots.

Finally, add broccoli, snow peas, capsicum, red curry paste, coconut cream and the lime (squeezed) and stir through. Simmer for 15-20 mins on low heat. Serve with Jasmine rice. Serves 4-6.
